Ingredients
- 1 cup frozen mixed vegetables
- 1.5 cups water
- 1 3 oz. package instant ramen (seasoning packet set aside)
- 1/2 cup full-fat coconut milk*
- 1 tsp curry powder

Instructions
Start with Vegetables
- In a small saucepan, add 1 cup of frozen mixed vegetables and 1.5 cups of water. Cover with a lid and bring to a boil over high heat.
Cook the Ramen
- Once the water is boiling, add the ramen noodles, discarding the seasoning packet temporarily.
- Boil for 2-3 minutes, stirring occasionally, until the noodles soften.
Add Coconut Milk
- Shake the coconut milk can to combine the solid and liquid parts. Measure out 1/2 cup and stir it into the pot, ensuring it's evenly mixed.
Season and Serve
- Stir in the reserved ramen seasoning packet and 1 teaspoon of curry powder, mixing well until the broth is rich and aromatic.
