Ingredients
  

  • 1 cup frozen mixed vegetables
  • 1.5 cups water
  • 1 3 oz. package instant ramen (seasoning packet set aside)
  • 1/2 cup full-fat coconut milk*
  • 1 tsp curry powder
  • * Shake the coconut milk can before opening to ensure proper consistency.

Instructions
 

Start with Vegetables

  • In a small saucepan, add 1 cup of frozen mixed vegetables and 1.5 cups of water. Cover with a lid and bring to a boil over high heat.

Cook the Ramen

  • Once the water is boiling, add the ramen noodles, discarding the seasoning packet temporarily.
  • Boil for 2-3 minutes, stirring occasionally, until the noodles soften.

Add Coconut Milk

  • Shake the coconut milk can to combine the solid and liquid parts. Measure out 1/2 cup and stir it into the pot, ensuring it's evenly mixed.

Season and Serve

  • Stir in the reserved ramen seasoning packet and 1 teaspoon of curry powder, mixing well until the broth is rich and aromatic.
