Ingredients
  

  • 2-4 petite steaks
  • Salt and pepper to taste
  • Garlic powder to taste
  • 1 tablespoon olive oil
  • 2-4 pounds baby potatoes diced
  • 2-6 tablespoons salted butter
  • 2 teaspoons minced garlic
  • 1 teaspoon dried Italian herb blend
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh parsley

Instructions
 

Preheat the oven:

  • Preheat your oven to 400°F (204°C). In a small bowl, mix together 2-6 tablespoons salted butter, 2 teaspoons minced garlic, and 1 teaspoon dried Italian herb blend. Set aside.

Season the steaks:

  • Generously season 2-4 petite steaks with salt, pepper, and garlic powder on both sides.

Sear the steaks:

  • Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Sear the steaks for 2-3 minutes per side until browned. Remove from the skillet and set aside.

Cook the potatoes:

  • Add 2-4 pounds diced baby potatoes to the same skillet. Season with salt, pepper, and garlic powder to taste. Sauté for 3-5 minutes until lightly browned. Push the potatoes to one side of the skillet and return the steaks to the other side.

Finish in the oven:

  • Transfer the skillet to the preheated oven and cook for 15-20 minutes, or until the potatoes are fork-tender and the steaks reach your preferred doneness. Remove from the oven and top the steaks with the prepared garlic butter. Let it melt over the meat, stirring the potatoes to coat them in the buttery goodness.

Garnish and serve:

  • Sprinkle with 1 teaspoon chopped fresh thyme and 1 teaspoon chopped fresh parsley. Serve hot and enjoy!
