Ingredients
  

Mashed Potatoes:

  • 1.5 lb. potatoes about 5 or 6 medium, Russet or Yukon Gold
  • 2 tablespoons clarified butter or ghee
  • ¼ cup milk of choice
  • ¼ cup plain Greek yogurt
  • Sea salt and freshly ground black pepper to taste

Steak Bites:

  • 1 tablespoon avocado oil or olive oil
  • 6 cloves fresh garlic peeled and crushed
  • 1 lb. sirloin steak cut into bite-sized pieces
  • Sea salt to taste
  • 2 tablespoons clarified butter or ghee
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped chives

Instructions
 

Make the mashed potatoes:

  • Peel and rinse 1.5 lb. potatoes thoroughly. Bring a large pot of salted water to a boil, add the potatoes, and cook until they break apart easily when pierced with a fork, about 20 minutes. Drain well and mash to your desired consistency.

Prepare the butter-milk mixture:

  • In a small saucepan, bring ¼ cup milk and 2 tablespoons clarified butter or ghee to a low simmer, whisking together until well combined.

Finish the mashed potatoes:

  • Stir ¼ cup plain Greek yogurt into the mashed potatoes. Gradually pour in the warm butter-milk mixture while continuing to mash until smooth and creamy. Season with sea salt and black pepper to taste.

Cook the steak bites:

  • Heat 1 tablespoon avocado oil or olive oil in a large skillet over medium-high heat. Add 6 crushed garlic cloves and cook until fragrant, about 1 minute. Add 1 lb. sirloin steak bites and sear on each side until slightly browned, about 3-4 minutes per side. Reduce the heat and stir in 2 tablespoons clarified butter or ghee until melted, coating the steak well. Season with sea salt to taste and garnish with 1 tablespoon chopped parsley and 1 tablespoon chopped chives.

Assemble the meal prep bowls:

  • Divide the mashed potatoes and steak bites evenly into 4 meal prep containers. Store in the fridge for up to 5 days or freeze for 2-3 months. Reheat before serving and enjoy!
