Ingredients
  

  • 2 cups loosely packed spinach or romaine lettuce
  • 1 cup smoked pork shoulder shredded
  • cup corn canned, frozen, or grilled
  • ½ avocado diced or sliced
  • ¼ green pepper diced or sliced
  • 2 tbsp fresh cilantro chopped
  • 2 –3 tbsp BBQ sauce
  • 1 –2 tbsp ranch dressing optional
  • 1 lime wedge

Instructions
 

Prepare the Lettuce:

  • Place 2 cups of spinach or romaine lettuce in a serving bowl.

Add Toppings:

  • Arrange 1 cup of smoked pulled pork, ⅓ cup of corn, ½ avocado, and ¼ green pepper over the greens.
