Ingredients
  

  • 2 pounds pork shoulder roast
  • 1 ¼ cups caffeinated pepper-type soda such as Dr Pepper®
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¾ cup packed brown sugar
  • 1 4-ounce can diced green chiles
  • cup salsa verde
  • 1 habanero pepper diced (optional)
  • Salt and ground black pepper to taste

Instructions
 

Prepare the Pork:

  • Place the 2-pound pork shoulder fat-side-up in a slow cooker. Pour 1 ¼ cups of soda over the pork, then sprinkle with 1 teaspoon of garlic powder, 1 teaspoon of salt, and ¼ teaspoon of black pepper.

Cook Low and Slow:

  • Cover and cook on Low for 8 to 10 hours, or until the pork is tender and easily pulls apart with a fork.

Shred and Mix:

  • Remove any bones and solid chunks of fat from the pork and discard. Using two forks, shred the pork into fine pieces. Stir the shredded pork back into the cooking juices. Add ¾ cup of brown sugar, 1 can of diced green chiles, ⅔ cup of salsa verde, and 1 diced habanero pepper (if using). Season with additional salt and pepper to taste. Stir thoroughly to combine.

Enhance the Flavor:

  • Cover and cook on Low for an additional hour, allowing the flavors to meld together.
